I have to say that has got to be the best sounding blog title I've heard! A free nourishing recipe ebook AND a recipe for raw organic chocolate (also nourishing)?! That's a double whammy if I ever heard one!
Let's start with the chocolate first (priorities!) In case you missed it, we just all survived the chocolate heavy weekend of Easter. I swear I have never seen so many foil wrapped chocolate bunnies and eggs in the fresh fruit and vegetable section of the supermarket before - they seemed to be breeding rapidly. Since going sugar free, I don't like the taste of milk chocolate and only eat at least 70% dark and preferably 85% dark chocolate. I normally choose Green & Blacks organic or Lindt. But my favourite is pure raw organic cacao homemade chocolates which are so much more nourishing for you and so simple to make.
Now I know a lot of people are madly throwing leftover Easter chocolates in the bin, eating lots of cleansing healthy food and madly exercising after an indulgent weekend, but you still need this chocolate recipe, trust me. For future reference. You won't be feeling guilty next Easter (or whenever) or in a sugar coma now that you have this easy recipe. Not only is this chocolate raw and organic, but it's dairy free, gluten free and can be sugar free too. Tick, tick, tick!
Plus there is something very satisfying about making anything yourself from scratch. (I adore making things from scratch.) The recipe is pretty flexible, especially with the level of sweetness and flavours. Play and experiment!
Raw Organic Nourishing Chocolate
Ingredients
115g Loving Earth raw organic cacao butter
100g Loving Earth raw organic cacao powder
6-10 scoops* of Nirvana organic stevia powder
1 tsp pure vanilla powder or organic extract
1-2 tsp raw organic honey (omit for sugar free)
~ Chocolate moulds (I found silicon love heart ones for $1.50 at the Reject Shop!)
Optional Additions
Nuts - almonds, hazelnuts, macadamias, pecans, walnuts, pistachios etc...
Nut butter - peanut, almond, hazelnut etc...
Dried fruit - cranberries, sour cherries, apricots, mango etc...
Coconut flakes
Ground spices - chili, cinnamon, ginger etc...
Chia seeds
Method
Place the cacao butter in a bain marie or in a glass bowl over a pot of gently boiling water, warm until melted. Please don't microwave it.
Take a few tablespoons of the melted cacao butter and pour into another bowl, add the raw cacao, vanilla powder and stevia and stir until smooth. (Combining it with a little cacao butter first means you don't end up with lumps and can get a nice, silky smooth mixture.)
Add the remaining melted cacao butter and stir until combined.
Now you have some options of included any of the additions to your chocolates. Pour a little chocolate into each mould and allow to firm up a bit then add in your nuts, dried fruit etc... and spoon remaining chocolate to cover and fill each mould. Or you can obviously just make pure chocolates.
Place in the fridge until the chocolate sets. Pop out of the moulds and store in an air tight container in the fridge.
