So as you may know, I get a lovely big box of fresh, seasonal produce from Box Fresh each week - delivered right to my door. Last week I started a weekly recipe post using some of produce that I get...and look at me go! Already a few days late on post number two! I made this delicious, vegan "ice cream" when it was scorching hot in Sydney...and then it was torrential rain for a few days. It just seemed wrong to post ice cream when it's raining; but luckily the weather has fined up and this should be perfect for the weekend!
I have to say the white peaches that we got are some of the most divine I've ever had. Peaches are one of those quintessential, summer-inducing flavours for me. Pair that up with some coconut and you have a heavenly, healthy treat for a hot summer's day (or whenever you like really - I won't judge).
It's dairy free, sugar free, vegan, raw and you could substitute tahini for the nut butter to make it nut free. So go on, all you have to do is freeze some peaches and nanas overnight and you can be whizzing your way to a peachy keen ice cream land in a few minutes! Feel free to eat it straight away like soft serve too. I told you I don't judge.
